
The warm, summer weather means family gatherings and potlucks! Here is a delicious baked bean recipe from Joyce Hiebert, MCIAs Lab Technician and Data Specialist. Make sure to support Michigan Agriculture and purchase Great Northern Beans grown right in our Great Lakes State!
Baked Beans
1 lb dry Great Northern beans
1 cup finely chopped onion
½ cup molasses
¼ cup packed brown sugar
2 Tbl prepared mustard
1 Tbl Worcestershire sauce
½ tsp salt
Place beans in a Dutch oven and cover with 8 cups of cold water. Let soak overnight. Drain beans. Combine 8 cups of fresh water and beans in same Dutch oven. Bring to a boil, reduce heat. Simmer, covered, 1 ½ hours or until very tender, stirring occasionally. Drain beans and reserve 1 ½ cups of liquid. Return beans to Dutch oven. Stir in onion, molasses, brown sugar, mustard, Worcestershire sauce, salt, and reserved bean liquid. Transfer to a 2 quart casserole. Bake, covered, in a 350 degree oven for 1 ½-2 hours or until desired consistency, stirring occasionally.
