With the colder, Michigan temperatures upon us, we wanted to share something that is warm, hearty, yet delicious. Below is a soup recipe from MICA’s very own Joyce Hiebert. Enjoy!
15 Bean Slow Cooker Soup
1 package of Hurst’s HamBeens 15 Bean Soup with flavor packet
8 cups of water or ham, chicken, beef or veggie broth
1 lb sausage or ham, diced
1 large onion, diced
1 clove garlic, minced
1 tsp chili powder (optional)
1 15oz can diced tomatoes
Juice of one lemon
In a colander rinse and inspect beans thoroughly.
Pour beans into slow cooker with liquid, onion, meat, garlic, and chili powder. Stir to combine. Cook on high for 5-7 hours and check tenderness. After beans are tender, stir in tomatoes, flavor packet, and lemon juice. Cook for an additional 30 minutes.
Pour a big bowl and enjoy!
